Established in 2023 by Adi Badenhorst, Saldanha is a beautiful tribute to the sherries of Spain and South Africa’s own tradition of fortified wine.
Mostly Palomino with Chenin Blanc, Sauvignon Blanc, Verdelho, & Colombard
The flor yeast is from Nietvoorbij in Stellenbosch and includes three Spanish strains.
Only free run must is used for Fino/Amontillado -hard pressed must is used for more oxidative styles- aged four years under Flor only steps from the Atlantic in their open-air cellar. 1,100 bottles made.
