ForFrançois Rousset-Martin, the concept of terroir goes beyond the vineyard. It extends down a rickety ladder and into his 300 year old Jura cellar - a living, thriving world. Here countless bacteria, yeasts and fungi have been invited to pull up a chair, pour a glass of Macvin, and make themselves at home. There are mould-covered barrels, thick cobwebs, and walls black with long-evaporated alcohol. This environment shapes the character and quality of Rousset-Martin’s wines, and it's as important to him as the vineyards above...
