Since inheriting vines in some of Château-Chalon’s most idyllic climats, as well as a spectacular 300-year-old cellar in the village of Nevy-sur-Seille, François Rousset-Martin has transformed his family’s winery into one of Jura’s most exciting domaines.

Raised in Burgundy by his microbiologist father who worked at the Hospices de Beaune, François took over his grandfather’s estate in 2007. Amid a backdrop of steep limestone cliffs and grazing livestock, he tends 10ha of low-yielding, organically-farmed Savagnin, Chardonnay, Poulsard, and Pinot Noir across more than 20 tiny parcels. 

Vinified site-by-site with little to no sulphur, François is redefining expectations of Château-Chalon with a range of ouillé (“topped-up”) wines that showcase the appellation’s subtle terroir variations. He also makes a tiny amount of traditional Château-Chalon, aged sous voile for 8 years. Bottled without fining or filtration, Rousset-Martin’s spellbinding cuvées are layered with complexity that is underscored by laser-like acidity and mineral tension. 

A recent dinner hosted by François at Rotters Towers included rare gems from his cobweb-covered cave and fully justified his growing reputation. We can now offer this allocation of his most recent releases direct from the winery, so that you can taste for yourself why he has become one of the most admired winemakers in France.
