Mathieu Deshautels

Mathieu Deshautels studied oenology in Beaune, then worked in Burgundy with Claire Naudin, in the Jura with Fumey-Chatelain and alongside fellow Champagne grower Elise Bougy. He farms just 0.7ha of biodynamic vines in Le Mesnil-sur-Oger and Cramant. With long lees ageing and a light touch, he makes Champagnes with great depth, freshness and structure.
