Adi Badenhorst’s wines have helped revive many of South Africa’s old vineyards and neglected grape varieties. The Saldanha Wine & Spirit Company is his latest project - a tribute to the country’s long tradition of fortified wines. In a converted petrol station on the west coast, Swartland fruit is transformed into brilliant, small-batch wines through a combination of traditional and modern techniques. Three Sherry-inspired wines have just arrived are available now, in very small quantities.
