Founded in 1868, Domaine Simon Bize forged an enviable reputation during the 1970s under the widely admired Patrick Bize. Since his death in 2013, the estate has been run by Patrick’s wife Chisa, who has continued the domaine’s long tradition of crafting time-defying Pinot Noirs and crystalline Chardonnays that are the reference point for Savigny-lès-Beaune.
A student of biodynamic pioneer Anne-Claude Leflaive in Puligny-Montrachet, Chisa uses an amalgam of organics and biodynamics – coined as “Bize-dynamics” – to farm 22ha of vineyards across Savigny-lès-Beaune, including six 1er Crus and Grand Cru parcels in Corton-Charlemagne and Latricières-Chambertin.
Bize follows the practice of working with whole bunches during vinification, resulting in vividly fruity wines with gorgeous aromas and exquisite freshness, which develop increasing complexity for decades after they are made.
A 1.8ha parcel of 50-year-old vines overlooking Savigny, ‘Les Perrières’ produces dense and mineral wines that perform high above their Bourgogne-level appellations. From a vineyard planted in 1939, 1950, and 1979, ‘Aux Grands Liards’ is perfumed with red berries and sweet spices, while 1er Cru ‘Aux Vergelesses’ offers a rich core of fruit threaded with muscular tannins. Powerful and long-lived, Bize’s Corton-Charlemagne is full of energy, while her Latricières-Chambertin exudes richness and finesse.
For a long time, the Bize wines were a well-kept secret, but they are now justifiably on the radar of many Burgundy lovers – their quality and longevity speak for themselves.
