When Philippe Valette began working at his family’s Mâconnais domaine in the early 90s, he at once set about converting its vineyards to organic and biodynamic farming. Almost three decades later, Valette is enjoying the acclaim it has earned for brilliant Chardonnays that combine tradition and innovation. The Valette style - long lees ageing yielding concentrated, harmonious wines - has persisted through generations, but now Philippe blends multiple vintages to achieve the perfect balance.
