Cassini Saint-Émilion 2021

Arnauld Cassini is leading something of a revolution In Bordeaux. Trained in the Loire (with winemaking legends Catherine and Pierre Breton), Arnauld takes a hands-off approach in the vineyard, using biodynamic farming methods to grow his grapes. He ages the wine in cement vats (no oak barrels here!) for 22 months; uses no protective sulphur dioxide; and doesn’t fine or filter. The result is an exceptionally pure and vibrant take on Merlot from Bordeaux.
