If you could trademark a wine style, PYCM would have a good claim to that smoky note of gunflint that has become their signature. Layered over wines of richness and generosity, it has helped make their white Burgundies into modern benchmarks. You’ll find a similar profile in their Pinot Noir Rosé, made with fruit grown in the Hautes-Côtes village of Cormot-le-Grand, and in Santenay. Aged in large old barrels before being bottled without fining or filtration, its combination of refreshment and complexity has made it essential summer drinking for Burgundy fans. Just 600 cases are produced each year.
