In 1989, Alice and Olivier de Moor planted vines on a relative's field in Chablis - a much simpler thing to do before decades of new regulation. Back then, nobody was talking about natural wine, but the De Moor’s simple philosophy - grow good grapes, then get out of the way - made them accidental pioneers. Almost forty years later their mineral, pure Chablis are modern-day reference points, and on strict allocation.
