Eleni Vocoret used to think she didn’t like Chardonnay. Then in 2010 somebody gave her a glass of Vincent Dauvissat’s Chablis ‘Le Clos’, and she knew she wanted to make wine like this.
In the fifteen years since, Eleni and her husband Edouard have set about doing just that, becoming one of the leading artisanal producers of Chablis’ new generation. The ingredients are simple - regenerative farming, wild yeast fermentations and, following in the footsteps of Chablis legends Dauvissat and Raveneau, ageing in old oak barrels. The wines are first class, combining the minerality typical of Chablis with a weight and complexity only found in the region's top wines.
Most producers in the region blend their village-level plots together, but the Vocorets have always separated them into single-parcel Chardonnays to express a real sense of place. 'Le Bas de Chapelot' – from 45 year old vines beneath the lauded 1er Cru 'Montée de Tonnerre' – is their best-known cuvée, offering concentrated citrus fruit and a detailed, mineral finish. It’s a special wine right from release, but give it a few years in bottle and it’s even better.
