Cédric Bouchard is one the most important young revolutionaries in Champagne. From a tiny estate of north-facing vines in Aube given to him by his father, Cédric – a somm turned winemaker – crafts distinctly pure and finessed wines. The ethos at his tiny house, Roses de Jeanne, is simple: single vineyard, single variety, single vintage.
A quality-focused grower, Cédric works with exceptionally low yields and employs a chemical-free, organic approach to get the best from his fruit. Gentle in bubbles, but full of flavour, his Champagnes are best decanted to further reduce the CO2 and for their layers of complexity to unfurl.
From 35-year-old vines on south-west facing slopes with a limestone clay base on the Côte de Béchalin, a lieu-dit in Celles-sur-Ource. 100% Pinot Noir. Exceptionally pure and fresh, with cool mint notes and gentle fruit bitters on the finish.
