In Jerez, Sanlúcar de Barrameda’s chalky white albariza soils have drawn acclaimed Champagne grower David Léclapart – a master of chalk – to set up a fine-wine project in its backstreets with business partner (and former architect) Alejandro Muchada.
Becoming friends when Muchada worked a harvest in the Montagne de Reims, the pair bought 3ha of vineyards in the historic pago of Miraflores together in 2015, releasing Muchada-Léclapart’s debut vintage the following year.
We adore their non-fortified, terroir-specific Palominos, especially with a bit of bottle age. From the lowest section of ‘La Platera’ and fermented in old Champenoise tanks, ‘Univers’ is fresh (just 11.5% ABV), linear, and spicy with its notes of pear, salt, mushroom, and olive.
