Despite working some of Burgundy’s more modest appellations and grape varieties, Catharina and Guilhem Sadde have lit the touchpaper with a set of remarkable wines from their young domaine, ‘Les Horées’ – a name which recalls the ancient Greek celebrations to mark the changing of the seasons.

Initially embarking on a culinary career, Catharina quickly found her calling in wine. After graduating from Geisenheim and Montpellier, she interned at a succession of renowned Burgundy estates, including Domaine de la Romanée-Conti and Comte Georges de Vogüé. Soon she became head of viticulture at Domaine Marquis d’Angerville and then assistant to Cécile Tremblay in Vosne-Romanée. There are stellar CVs and then there’s Catharina’s. 

In 2018, Catharina was offered a tiny plot of Beaune ‘Les Prevolles’, to which she added another hectare between Pommard, Volnay, and Puligny-Montrachet, while sourcing a portion of fruit from trusted growers. Farmed using biodynamic treatments and made with rigorous attention to detail, her wines combine pretty, whole-bunch aromatics and the supplest of textures.

Since Catharina’s maiden vintage sold out even before its release, ‘Les Horées’ has rapidly become one of Burgundy’s hottest new references. Grab some while you can.

Equal parts Gamay and Pinot Noir, made with 80% whole bunches and spends 11 months in used oak. Bright and graceful, with a summer berry profile.
