As drinkers are increasingly drawn to the charms of Vin Jaune – the Jura’s intensely nutty and sherry-like oxidative speciality – winemakers in Gaillac are on a mission to champion their own lesser-known wines aged under flor.
After a decade working as an oenologist for local domaines, Nicolas Lebrun purchased 6ha of vines and built a cellar in Vertus. Organic since 2009 and biodynamic since 2012, meticulous farming and healthy fruit are paramount to the domaine's ethos.
Working with local varieties that have fallen out of fashion, as well as harnessing techniques employed in the region for over 300 years, Nicolas crafts a Vin de Voil from Mauzac, Loin de l’oeil, and Sauvignon Blanc.
A blend of 2012 and 2013 fermented in barrel and aged for 75 months under flor, it shows notes of grilled walnuts and curry leaves, and a pensive quality that more than lives up to its name: ‘Head in the clouds’.
