Jean-François Ganevat – the Jura’s mad professor – is a superstar who, alongside retired master vignerons Pierre Overnoy and Jacques Puffeney, has most drawn attention to this obscure constellation in the past few decades.
An influential proponent of biodynamic farming and low/zero-sulphur additions, Ganevat ferments all five of the Jura’s permitted grape varieties to craft a roster of experimental cuvées and more conventionally made, Burgundian-style wines.
75% Gamay from 40-year-old vines grown in Morgon and 25% Jura Poulsard and Savagnin. Whole-bunch, semi-carbonic. Juicy dark berries, glou-glou perfection.
