Jean-François Ganevat – the Jura’s mad professor – is a superstar who, alongside retired master vignerons Pierre Overnoy and Jacques Puffeney, has most drawn attention to this obscure constellation in the past few decades.
An influential proponent of biodynamic farming and low/zero-sulphur additions, Ganevat ferments all five of the Jura’s permitted grape varieties to craft a roster of experimental cuvées and more conventionally made, Burgundian-style wines.
From old, low-yielding Chardonnay vines planted in 1919 and 1920. 22 months on lees. An intense profile of lemon curd and zest layered with chalky minerality – creamy and long. Give this time to fatten up and allow the complexity to build.
