Among the first of the elder statesmen in Jérez to promote the idea of terroir, Eduardo Ojeda and Jesús Barquín of Equipo Navazos began sourcing individual casks from the region’s top bodegas to supply hyper-specific one-off bottlings to a small group of their Sherry-obsessed friends.

Since 2007, their highly limited series of wines have been made available to the wider public, each bottle containing a dizzying level of information about its origins usually unavailable to the Sherry drinker. These spectacularly complex (and often very old) bottles are some of the wine world’s true bargains.

To the sparkling base (100% Xarel-lo from Colet’s vineyards), a ‘dosage’ of Palo Cortado and Amontillado are added before the wine is aged for 30 months on lees. Bone-dry and deliciously savoury, with a toasty, nutty character and a streak of salinity and citrus bitters.
