Bénédicte & Stéphane Tissot Côtes du Jura Chardonnay 'Sursis' 2019

The Tissots favour a reductive style of winemaking in contrast to the many producers making more traditional, oxidative wines in the Jura. 'Sursis' (meaning 'on borrowed time') is named in reference to these last remaining, old Chardonnay vines in Château-Chalon, an appellation famous for its Savagnin. A wine that flirts between the richness of barrel-and-lees-aged Chardonnay and fresh, salty minerality - perfectly tense and round in equal measure.
