Everything about Pascal Agrapart oozes modesty and tradition. He adopts very non-interventionist, chemical-free methods (although has no interest in being certified, just in case of rare emergencies), as well as extensive lees ageing. L'Avizoise comes from 60-year-old vines in the Les Robarts and Les Grox Yeux lieux-dits in Avize. Fermentation takes place under natural cork and the wine spends at least five years on its lees to produce a broad, rich style. Tropical and stone fruit melds with a delicious truffles-on-toast character.
