Based in the village of Latour de France in the Vallée de l’Agly, Jean-Hubert and his wife Brigitte craft remarkably complex and long-aged wines made from late-harvested Maccabeu grapes. Harnessing centuries-old methods of production, their wines spend eight months in cement, before ageing in 100-year-old, 600-litre barrels for ten years (double the legal requirement). As the Rancio ages and gently evaporates, the wine softens and umami-rich flavours emerge alongside notes of dried fruit and salted nuts. Similar in profile to dry Amontillado sherry or Sercial Madeira, this is delicious served alongside anchovies or manchego.
